Addictively good chicken kebabs served with a deliciously fragrant and tasty peanut sauce.

Ingredients

Marinade

  • 1 Garlic clove, crushed
  • 1 tsp Fresh ginger, finely grated
  • 2 tsp Brown sugar
  • 1 Cup (250ml) Nando’s Marinade
  • 1 tsp Turmeric
  • 1 tsp Curry powder
  • 2 Tbsp Peanut oil
  • 500g chicken breast fillets, sliced into long thin strips
  • 12 – 16 bamboo wooden skewers
 

Satay sauce

  • 1 Tbsp Oil
  • ½ Small onion, finely chopped
  • 1 Clove garlic, finely chopped
  • 1 tsp Thai green curry paste
  • ½ Cup (125ml) Coconut milk 
  • 4 Tbsp Roasted peanuts, finely chopped
  • 41 tsp Peanut butter
  • 1 Tbsp Sugar
  • 1 Tbsp Thai Fish sauce
  • 1 Tbsp Lime juice
  • 2 tsp Soy sauce
  • 2 tsp Nando’s PERi-PERi Sauce
 

Toppings

  • ¼ Yellow pepper (capsicum), finely diced
  • ¼ Orange pepper (capsicum), finely diced
  • 3 Spring onions, finely sliced
  • 2 Tbsp Fresh coriander leaves
  • 1-2 Fresh red chillies, finely sliced (optional)
 

 

Directions

  1. Cut the chicken into long thin strips and place in a non-metallic bowl. 
  2. For the marinade, combine the remaining ingredients and brush over the meat, leave to stand for as long as possible. Heat level letting the flavours infuse for at least 15 minutes.
  3. Soak the bamboo skewers in warm water for 20 minutes before using, to prevent burning during cooking. 
  4. Thread strips of chicken onto skewers in a thin zigzag pattern. 
  5. Preheat a grill or griddle pan and cook the skewers for 2-3 minutes per side.  
  6. For the satay sauce, heat the oil and fry the onion and garlic until soft. 
  7. Add green curry paste and mix well. 
  8. Stir in the remaining ingredients and cook for 5-10 minutes.
  9. Scatter the toppings over the skewers and serve with the satay sauce.
